Winemakers Note:
The fruit was sourced from a 30+ year old vineyard on the hill outside Landsborough, in the north-western corner of the Pyrenees region. The 2021 vintage was slightly cooler than normal and the grapes were picked at perfect ripeness with great acid balance. They were crushed and destemmed and then wild yeast fermented. The must was then basket pressed and matured on 25% new French oak for 24 months. This is classic Pyrenees Cabernet with lashings of blackcurrant, cassis and blackberry fruit characters, restrained oak influences and fine grained tannins. A wine that drinks beautifully now but will only continue to improve over time.
